What do you do with it?

What do you do with it?

Honestly, most people ask us this. Here is what our house does with it.

  • In coffee instead of sugar. Joe does this every morning.
  • Stirred into plain yogurt or oatmeal.
  • Over sliced bananas or a bowl of berries.
  • On a cheese board. Hard cheese, a drizzle, done.
  • Brushed on chicken or salmon the last five minutes in the oven.
  • One to one for sugar in baking. Cut the other liquid a little.
  • On a biscuit, hot, with butter. Do not overthink this one.
  • Peanut butter and honey on toast. Our kids live on it.

A chef spotlight is coming soon. This is just the comb. The honey follows.

Palmetto Farms grew from something personal to our family. During a difficult season, I watched Joe find peace in the bee yard. Seeing what that time meant to him inspired me to build a family business around caring for the bees and sharing what they give us.

Honey questions, answered
Different bees, different flowers, or a different process?

The flowers make the biggest difference. Bees gather nectar from different plants, giving honey its characteristic flavor, aroma and color. The same colony can produce different honey as the flowers around it change.

Is Orange Blossom honey flavored with oranges?

Orange Blossom names the blossoms the nectar comes from. It does not mean orange flavor was added. Its citrus-floral character comes naturally from the nectar.

How do you get bees to visit the right flowers?

Beekeepers place hives near particular plants during their bloom and time harvests around those blooms. Bees still forage freely. A named variety refers to the main floral source, rather than every drop coming from one flower.

How do bees actually make honey?

Bees bring nectar back to the hive, add enzymes and reduce its water content, including by fanning their wings. They store the thickened honey in honeycomb cells and seal it with wax.

How does honey get from the hive into a jar?

A common harvesting method is to remove the wax caps, spin the honeycomb frames in an extractor, then strain out wax pieces before bottling. The bees make the honey; the beekeeper harvests it.

What makes Spring Wildflower different?

Wildflower honey comes from a mix of flowers rather than one dominant floral source. Its flavor and color can vary with the season and what was blooming near the hives.

Where does your honey come from?

Tupelo Reserve comes from North Florida; Mangrove from the Tampa Bay Region; and Saw Palmetto, Orange Blossom and Spring Wildflower from Central Florida. The Meadow’s Velvet (Clover) comes from North and South Dakota.
